Vegan Gumbo

Vegan gumbo is my latest creation and I'm super happy to share it with you. This incredible stew-like soup is one of a kind due to its origins. So if you are in for a unique mix of veggies with a ton of hearty flavour all in the same bowl this soup is for you. 

Gumbo is probably the most popular dish of Louisiana's cuisine. It has influences from French, Spanish, African, Amerindian, German and Italian cuisines. So, you can only imagine the variety and richness when it comes to flavours. 

It is hard to pinpoint where and when exactly gumbo was created. Everyone has agreed that it was around the 18th century but it is hard to tell how. All the cultures above mentioned lived in close proximity and they influenced each other greatly and there are many different stories about the invention of gumbo.

So, if you've never heard or had Gumbo, let me tell you, you've been missing out. There are a few different ways to prepare this dish, and it will vary from cook to cook. But what you will certainly find in your bowl is a heavily seasoned soup, very similar to a stew and a ton of veggies. 

Vegan Gumbo ingredients

In order to go from soup to gumbo you need a few different things, but the most important one will definitely be the broth. Typically, the broth is made with a combination of meats and seafood, nothing different or special so far. We need to thicken it with either okra or filé to make it gumbo-worthy, which will also add a very unique flavour.  

This recipe is very forgiving since there are so many variations. You don't need to stick to any recipe and the ingredient quantities can also vary. This makes for a very practical meal and since it's so easy to make, you will want to bump it up the list of your go-to recipes. 

First of all, we need to make our gumbo vegan-friendly. The original recipe relies on meats a lot to get that pungent flavourful broth. I found that adding nutritional yeast and vegan sausages will help us get there, and if you find the smoked kind, even better!

The perfect use of spices is what makes Louisiana cuisine so popular. And you can probably find them all in your pantry. The trick here is to combine them the right way to make the magic happen. We need chilli powder, oregano, smoked paprika, thyme, and bay leaf to get that hearty flavour.

The cooking process is very easy. But we want to have that stew-like consistency so we have to let it simmer for about 10 -15 minutes to reduce the liquid. Also, here is when all the flavours of the veggies and the seasoning will come together. Hopefully, you can resist the incredible aromas that will take over your kitchen! 

Serve the gumbo straight out of the pot while it is still warm. Add a side of rice and there you have a typical delicious southern meal!

Ingredients

For the gumbo

  • ¼ cup nutritional yeast
  • 1 tablespoon olive oil
  • 2 pieces vegan sausage (sliced)
  • 2 cups vegetable broth
  • ½ tablespoon wheat flour

For the seasoning

  • 2 leaves bay leaf
  • 1 dash chili powder (optional)
  • 1 tsp dried oregano
  • 1 tsp dried smoked paprika
  • 1 tsp dried thyme

For the rice

  • ¾ cup rice
  • 1½ cups water

For the vegetables

  • 2 medium celery (thinly sliced)
  • 2 cloves garlic (minced)
  • 1 medium green bell pepper (chopped)
  • 1 cup okra (sliced)
  • 1 tsp olive oil
  • 1 medium onion (thinly sliced)

Directions

  1. Cook the rice in water until soft for about 20-30 minutes.
  2. Heat up the oil for the gumbo in a pot and add the flour, stir fry for about 3 minutes until golden brown, then set aside.
  3. Use a skillet and heat up the oil for the vegetables, add the vegan sausage and stir fry for about 2-3 minutes, then add the onion and garlic for 2 more minutes.
  4. Add the rest of the vegetables and stir fry for 3-5 minutes.
  5. Add the vegetables, vegan sausage and broth the the gumbo and stir well before you heat it up.
  6. Add the seasoning and let it simmer without the lid to reduce the liquid for about 10-15 minutes.
  7. Stir in the nutritional yeast and adjust taste, serve the gumbo with some rice on the side, enjoy!
