For the vegetables

  • 20 oz cabbage (thinly sliced)
  • 10 oz carrot (thinly sliced)
  • 4 medium scallion (thinly sliced)

For the dressing

  • 1 tsp black pepper (ground)
  • ⅙ cup dijon mustard
  • ¼ cup lime juice
  • ⅙ cup maple syrup
  • 1 tsp sea salt
  • 1 cup soy yogurt
  • ⅙ cup tahini


  1. Use a big bowl and add the vegetables.
  2. Use a small bowl to mix all the ingredients for the dressing and add it to the vegetables.
  3. Mix everything well and let it sit outside for a while before you serve it.
