Vegan Chocolate Chip Cookies

Oh boy, oh boy, oh boy - am I excited to bring you this recipe for vegan chocolate chip cookies! I am literally on the edge of my seat, not able to type this fast enough. You might think I am crazy, but just wait until you read this and see these photos. 

Okay, so just about everyone I know has had a chocolate chip cookie at least once in their life time. For me, well I may have had it more than once... maybe once a week since the moment I had teeth and could chew, but that's beside the point. I like to say that it was research, leading to this moment. I know my cookies well now and knew I stumbled upon something amazing when I made this neat little recipe up.

So enough blabbering, let's jump straight in and see what we need to do to make this. 

To make your very own mouthwatering cookies, you will need 8 ingredients and 40 minutes. This recipe does require some baking so it will take a little longer than most of our other 'short and sweet' recipes. However, I dare say that the finished product it is worth every single minute.

Cupcake flour

You will also need access to an oven, a bowl, a flat tray, and a mixer (a hand mixer, wooden spoon, or any type of mixing style you prefer is fine). 

Vegan chocolate chip cookies are the perfect snack (anytime, anywhere) because they are: 

  • Great tasting! 
  • Travel-friendly.
  • A family and crowd favourite.
  • A good source of protein - 10g per serve! 
  • Easy to make!  

Once you have prepared your cookies, you can easily store them in an airtight container. I would recommend storing them at room temperate. This recipe will make a serving of - perfect for the family or if you are like me, a midnight snack. Yes, all servings at once. What? I told you I liked my cookies... 

Unbaked cookies

One of my favourite parts about this recipe is that it is a crowd favourite. Cook a massive batch of these up for a party or family gathering and watch them disappear off the table! I often get told they taste amazing, yet I get the most shocked looks when I tell them that they are vegan cookies. So don't be afraid to try them out at your next gathering.

And there we have it - vegan chocolate chip cookies. Made to impress and de-stress (because who can be unhappy while eating cookies?) If you are feeling creative, why not try making your own version of cookie? Try adding your own mixture of flavourings into the base mixture and see what you come up with. Vegan cookies

Ingredients

  • 1 tsp baking powder
  • 1⅓ cups brown sugar
  • 2½ cups cupcake flour
  • ⅔ cup olive oil
  • ½ tsp salt
  • ½ cup vanilla almond milk
  • 1½ tsps vanilla extract
  • 3½ oz vegan dark chocolate

Directions

  1. Heat the oven to 170°C (340°F).
  2. Combine oil with sugar and mix well.
  3. Add almond milk and vanilla and mix.
  4. Mix in the cake flour, baking powder, salt and chocolate.
  5. Let the dough rest for 20 minutes in the fridge.
  6. Take out of the fridge and split into individual cookies.
  7. Lay the cookies on a baking tin covered with baking paper.
  8. Place the baking tin in the oven and bake for 15 minutes.
  9. Take out of the oven, allow to cool and enjoy.

Notes

If you can't find cupcake flour you can make your own easily. Start with all purpose flour and add 2 tablespoons of corn starch for every 1 cup of flour.
