Quick Savory Cashew Cream

  • ¼ tsp black pepper
  • 1 cup cashew nuts
  • 1 clove garlic
  • 1 tablespoon lemon juice
  • ¼ tsp onion powder
  • ½ tsp salt
  • ¾ cup water


  1. Add the cashews to a small pot and cover with water.
  2. Bring to a boil, reduce heat to medium/low and let simmer for about 20 minutes. This will really soften the cashews and make them easier to blend.
  3. After 20 minutes, drain and rinse the cashews and add to a blender with 1/2 cup of water and the salt.
  4. Blend until completely smooth. Add an additional 1/4 cup to 1/2 cup more water to get the consistency you like. Add in any of the sweet or savory seasonings at this time if you're using them.
  5. Blend for about 1 full minute to ensure it's really smooth.
  6. Transfer to a container with a lid and store in the fridge for up to 1 week.
