We well know Thanksgiving is not Thanksgiving if there's no pumpkin dessert on the table. So, we are not here to break traditions but we are switching things up a bit. This year, we are making an easy, heartwarming, delicious Pumpkin Pie Parfait. Another amazing Thanksgiving dessert for the books! 

I usually stick to the traditional pumpkin pie for Thanksgiving, seems like a no-brainer. At home, is an absolute favourite and we can't get enough of it. But last year I noticed everyone was a bit too full to eat a full slice of pie and there were a lot of half-eaten slices left. 

So, this year I decided to take all the elements I use on a pie and make something slightly different. I didn't want to change the taste too much since that's what we all love and crave. Instead, I made a light version of the traditional Thanksgiving dessert. 

Pumpkin Pie Parfait ingredients

If you've never had or heard of a parfait, let me introduce you to it. This beauty is a rich cold dessert with a smooth and fluffy consistency. And it's often served with diced season fruit and thick or whipped cream.

Usually, parfait recipes are made with loads of sugar which makes them pretty unhealthy. To get our sweet tooth satisfied but not overdose on artificial sweeteners we are adding ripe bananas. I've mentioned it before, but remember the riper the banana the sweeter it gets. Knowing this will help you regulate how sweet your dessert will come out.

I make most of our vegan Thanksgiving dishes. It's really rare when I do buy pre-made food. I love the cooking process before getting together with friends and family and I love the subtle but big difference that homemade meals make in one's life. 

Pumpkin Pie Parfait ingredients in a blender

Sometimes, to be very honest, by the time I get to making dessert I am a bit exhausted or too eager to mingle. This year, I didn't want to miss out so I made this pumpkin dessert as simple as I could with ingredients I had stashed in my kitchen ahead of time. 

I used almond milk, toasted almonds, cinnamon, the bananas, vanilla extract, and the star of this dish, pumpkin puree. I added granola as a pie crust substitute and to still have a bit of crunch in there. These ingredients also make this recipe super affordable. If you are after a budget-friendly recipe this is a great option. 

This pumpkin dessert is one of the easiest things you'll ever make. All you need to do is throw everything in the blender and mix it together. The key here is to allow enough time to get a bit of air in the mix so it comes out super smooth and super fluffy. 

I serve the parfait in mason jars, they look really pretty and it is very easy to keep them in the fridge. I simply layer the pumpkin parfait and the granola, and top it off with whipped coconut cream for the last touch!

Ingredients

For the pumpkin pie parfait

  • 262 ml almond milk
  • 36 g almonds (toasted)
  • 1 tsp cinnamon
  • 270 g pumpkin puree
  • 2 medium ripe banana
  • 1 tsp vanilla extract

For the granola

  • 61 g granola

For the whipped cream

  • 120 g coconut cream
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract

Directions

  1. Use a blender and add all the ingredients for the pumpkin parfait to it, blend until smooth.
  2. Use a jar and add one layer of the pumpkin parfait and another layer granola, then on top another layer of pumpkin parfait.
  3. Top it off with coconut whipped cream and sprinkle with some extra granola if you like, enjoy!
