Eeek! It’s that time of the year again. Yes, I’m talking about Christmas. Christmas is one of my most favorite times of the year when we get the family together and celebrate each other, life, and food. Food plays a major part in our festivities. And nothing says Christmas like Puff pastry turnovers with mushroom and walnut filling!

Being vegan at this time of the year can be hard – especially if some or most of your extended family are not. But there is no need to worry about that when using this recipe. I have used it multiple times with family members and they can’t even tell the difference. With the warm aromas of mushroom and roasted nutty texture, you’re bound to impress even the most stubborn members of your clan.

Ingredients

For the filling

  • 7 oz brown button mushroom (thinly sliced)
  • 1 tsp olive oil
  • 1 large onion (thinly sliced)
  • 1 cup walnuts (crushed and roasted)
  • 4 tbsps water
  • 1 cup white beans

For the bread

  • 2 tsps olive oil
  • 2 oz sandwich bread wholegrain (diced into small pieces)

For the seasoning

  • 1 tsp allspice
  • 12 tsp black pepper (ground)
  • 1 tsp sea salt

For the puff pastry

  • 32 oz puff pastry

Directions

  1. Preheat the oven to 350 °F (175 degrees).
  2. Heat up the olive oil in a skillet and fry the bread for about 5 minutes until golden brown.
  3. Heat up another skillet with the olive oil for the filling and fry the onion for about 1-2 minutes.
  4. Add the mushrooms to the onions and fry for an additional 3 minutes.
  5. Use a big bowl and add the ingredients for the filling and adjust taste.
  6. Cover a baking tray with baking paper and start preparing the turnovers.
  7. for every turnover you should use approx. 2 OZ ( 50g) of the puff pastry dough.
  8. Spread the filling equally into the center of the puff pastry and envelop the corners.
  9. Put it into the oven and bake it for 20-25 minutes until golden.
