Aside from being easy and delicious, the beauty of this potato puree is how you can pair it with all sorts of different mains. For this reason, this is my go-to side dishes whenever I'm in doubt. I cook the potatoes and the garlic, peel the potatoes and throw everything in the blender.

I am always pleasantly surprised by how good this simple recipe turns out considering the work I've put into it, close to none!

Ingredients

For the potato puree

  • 66 ml almond milk
  • 4 cloves garlic
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 680 g potato (remove skin and chop)
  • ½ tsp sea salt

For the garnish

  • 1 dash black pepper (ground) (optional)
  • 1 dash ground nutmeg (optional)

Directions

  1. Heat up the oven to 360F (180 C).
  2. Use the olive oil for the potato puree and add it to the garlic.
  3. place the garlic in a tin foil and bake for about 40 minutes.
  4. Bring water to boil and cook potato fork tender for about 10-12 minutes.
  5. Remove the skin of the garlic and add the potato puree ingredients to a blender.
  6. Add more almond milk if necessary but make sure it won't become too thin.
  7. Add the puree to a bowl and sprinkle with the garnish, enjoy!
