Overnight Oats with Apple, Carrot and Walnut

For the fruit

  • 1 small apple (grated)
  • 1 small carrot (grated)
  • 1 lime (juiced)
  • 1 tbsp maple syrup

For the oats

  • 12 tablespoons almond milk
  • 12 tsp dried coriander seed powder
  • 6 tablespoons porridge oats

For the nuts

  • 12 oz walnut halves (crushed and roasted)


  1. Use a small bowl and mix the ingredients for the oats well before you fill the mixture into a jar.
  2. Use a small bowl and mix all the ingredients for the fruit well before you add another layer on top of the oats.
  3. As last step add the roasted walnuts, close the jar and put the overnight oats into the fridge for about 12 hours.
