For the mushroom solyanka

  • 2 leaves bay leaf
  • 2 dashes black pepper (ground)
  • 192 g button mushroom (chopped)
  • 1 tbsp dried smoked paprika
  • 2 cloves garlic (minced)
  • 67 g green olives (cut in half)
  • ½ tsp lemon zest
  • 1 tbsp maple syrup
  • 80 g nutritional yeast
  • 1 tablespoon olive oil
  • 50 g pickel (chopped)
  • 453 g potato (cleaned and chopped)
  • 66 g tomato paste
  • 1326 g vegetable broth
  • 178 g white cabbage (chopped)
  • 2 medium yellow onion (thinly sliced)

For the bread

  • 4 slices whole grain bread (optional: toasted)

For the garnish

  • ½ lemon (sliced) (optional)
  • 500 g soy yogurt
