These delicious vegan mini burritos are super fun to eat and an easy recipe for anyone to make. These beauties are always a kids favourite and the whole family will love them. They are the perfect vegan finger food and if you pack a few, they are also a hearty comforting meal.
We absolutely love burritos at home. I have a few different recipes under my sleeve and I love making them with the kids. This has been one of our favourite weekend activities lately. We all make burritos together and then we head out on an adventure.
Especially during summertime, we try to spend as much time as possible outside. So we look for any excuse, or opportunity to be outside. So for us, having meals that we can take with us has become a bit of a thing.
These burritos are ideal for that matter. We make a big load and everyone can eat a few or as many as they please. And since the kids usually make them, they are over the moon to eat what they've cooked. And, I love that I don't have to encourage eating, all moms out there know this is a thing when kids are running wild and having fun.
I made this recipe really simple, with ingredients that are usually in my pantry. The only thing I had to go out and buy was the meat substitute. This time, I used Beyond meat since it's really versatile and easy to use. Also, it's soy, GMO, and gluten-free, it's a great meat alternative when you have different dietary needs to attend to.
I really like how this Beyond meat crumbles really easily, it resembles minced meat. And the different spices we are using will add the perfect Mexican taste to it. If you have any non-vegans around, they might not even notice they are eating vegan burritos.
I also stuffed Mexican rice in these vegan mini burritos, this will make them really hearty, filling, and super flavourful. Mexican rice is usually made with white rice but I always prefer brown rice. Especially, for recipes like this one in which we are making the burritos with flour tortillas.
You might be able to find small flour tortillas at some supermarkets. However, to make my life, and yours, a lot easier, I simply cut regular sized tortillas into 4 pieces. You can also just half them if you don't want to make the burritos so small. We have options here!
In this house, we can't have Mexican food without avocado. So, I made a little concoction of avocado, cilantro, and lime juice. Add as much or as little as you'd like to get a nice fresh zesty touch in these vegan mini burritos.
The hardest step in this recipe is the wrapping part, the trick is to not go too crazy with the filling. The But you got this! Even if you mess up a couple, you will have plenty more to stuff your face and share with the crowd!
