Salads are the best way to get your daily dose of veggies but they're not everyone's cup of tea. I really believe a good dressing can make a massive difference and make you love a beautiful bowl of veggies. For that reason, I wanted to share this Mediterranean salad dressing with you. I'll tell you why.
First of all, this Mediterranean salad dressing is incredibly simple to make. It needs very few ingredients and all you have to do is put them in a jar, close the lid and shake, shake, shake! You could also put it in a bowl and whisk it, but shaking is way more fun. If you dare, hand it to your little ones and let them join in the fun.
We need olive oil to make our Mediterranean salad dressing, which is not surprising at all. Olive oil is one of the main ingredients in Mediterranean cuisine and is a great addition to any diet. With moderation of course.
Olive oil is packed with antioxidants, fatty acids and a bunch of health benefits. Is good for your heart, reduces inflammation and cholesterol levels, helps in weight loss, improves your metabolism and digestion, and is amazing for your skin too.
The thing about olive oil is that is not overly greasy, which is why is so good for dressings. Just make sure you don't over do it as I did. I have to confess that I had to reduce the amount of oil since it came out a bit too heavy when I first created the recipe.
I originally made this Mediterranean salad dressing for a Mediterranean Salad with Sun Dried Tomatoes. They paired really nicely but it was a bit too greasy for my liking, and I didn't want to turn a beautiful and light salad into a calorie bomb.
Aside from the olive oil we also need lime, basil and oregano. For this step, is very important you use fresh ingredients. The olive oil will get infused with the taste of the herbs and a bit of lime juice will really bring all the flavours together.
I always make more of this Mediterranean salad dressing than what I actually need. I like to keep it in the fridge for a few days. When the herbs sit in the oil for a while the infusion becomes more potent and much more flavourful.
And even though it is intended to be a salad dressing, I use this infusion on many other dishes. You can drizzle it over grilled veggies, as a finishing touch over a bowl of hummus, pizza or pasta. I even use is for veggie sandwiches and wraps. It adds a nice little extra touch of flavour.
As you can see, a Mediterranean salad dressing is much more than a dressing. We love how simple it is to make and how it helps us stay away from the store bought dressings that usually come stuffed with all the additives and preservatives we want to avoid.
