There are many different noodle salads out there made with every single kind of noodle you can think of. I went with glass noodles for a few reasons. First of all, they are incredibly quick to make. Just make sure you follow the package instructions so they don't get too sticky. Glass noodles are very thin so it's easy to overcook them. Keep a close eye on them.
Also, I wanted this Japanese glass noodle salad to be filing, light and healthy. Glass noodles are made from mung bean starch so they seem a bit lighter than some other types. But you still get a good amount of carbs, almost the same as pasta. They are complex carbs so they're a perfect option to keep you full and fuelled for a good while.
We also have a few veggies in our Japanese glass noodle salad. I wanted to add some colour and texture so I threw in carrot, cucumber, edamame and a bit of wake seaweed. This is a good mix of different veggies that will give us a good variety of nutrients.
You can find wakame seaweed in most supermarkets nowadays. It usually comes dry so you have to hydrate it for a little bit before you use it. This ingredient might be a bit challenging for a few people since it has a very unique briny flavour, but it is definitely worth giving it a try.
I want to incorporate more seaweed into my diet so expect to see more recipes like this Japanese glass noodle salad. Wakame is incredibly healthy, low on calories with very little fat. It's really good for managing weight, it protects your bones, and helps regulate hormone levels. It's also good for your heart, your hair, skin and it boosts your energy.
