For the pasta

  • 2 dashes black pepper (ground) (optional)
  • 6 oz pasta

For the sauce

  • 2 cups baby spinach
  • ½ cup hummus
  • ½ lb mushroom (sliced)
  • 1 tsp olive oil
  • 1 medium onion (thinly sliced)
  • 2 dashes sea salt (optional)

For the topping

  • 1 tbsp nutritional yeast (optional)


  1. Boil the pasta following the instructions on the package.
  2. Use a big skillet and heat up the oil, add the onion and sauté for about 2-3 minutes.
  3. Then add the mushrooms and sauté for about 5 minutest more minutes.
  4. Stir in the hummus, salt and pepper and leave it on the stove until properly heated up.
  5. Just before serving stir in the baby spinach and serve the pasta with some sauce on top, sprinkle with the topping, enjoy!
