We have taken guacamole to a whole other level and we've turned it into a delicious avocado soup. This creamy guacamole soup has been an ultimate favourite at home and is the easiest thing to make. If you are an avocado lover, you will love this recipe as well. 

You all know how much we love avocados here at vegan.io and of course, guacamole is on the top list of what we usually make at home when I buy avocados. However, having this delicious dish as a side seems to me like guacamole is not getting the attention that it deserves. 

I wanted to change that but not in a million years would I've thought of turning guacamole into a soup. I'm not sure how I came up with this one I just know that I love the rich and creamy texture of guac so much! It has this zesty freshness to it that keeps you coming back for more and I wanted more of that in my meals.

Guacamole Soup ingredients

I've been making this soup for a little while now and it's always been an absolute hit with family and friends. We get the best of two worlds, actually, it's more like three or four worlds. This avocado soup has all the freshness of guac, it's so incredibly flavourful, it has all the heartwarming cosy feelings of a soup, and you get guacamole as a main dish!

How good is life?!

The recipe needs pretty much the same ingredients as your typical guac. We added a few more to make sure it's still creamy and flavourful. We are using a fair amount of vegetable broth which will dilute our soup. And I didn't want to use 10 avocados to get it right. 

I am using 4 avocados for this recipe. At first, I thought that might be too many and I could feel the pressure of getting it right. I mean, avocados are precious! And in some places, they are not the cheapest thing on the fresh produce section. 

I can proudly say that the creamy texture and the rich taste of this guacamole soup are definitely worth each one of those avocados. And there is something incredibly comforting about this homemade soup that makes it even more worth your avocados.

This recipe is incredibly easy to make. You don't have to do a whole lot of cooking for this one. So if you are a newbie in the kitchen this is the perfect recipe to start getting more comfortable behind the stove.

To make this avocado soup, we will fry onions and sliced shallots in a big pot until fragrant. Then we add the broth and bring it to boil. And once it's there we can start adding the avocado flesh, cilantro and lime. We blend this and then add beans and nutritional yeast to season it. 

How easy was that?!

In just a few minutes you have made a beautiful creamy guacamole soup. Make sure it is warm enough for you before your serve. Add sliced tomatoes as a garnish so it looks extra pretty. And lastly have some tortilla chips on the table for the ultimate guacamole experience!

Ingredients

For the guacamole soup

  • 4 avocados (inside)
  • 8 g fresh cilantro (leaves chopped)
  • 2 cloves garlic (minced)
  • 1 lime (juiced)
  • 40 g nutritional yeast
  • 2 tsps olive oil
  • 1 medium shallot (thinly sliced)
  • 1326 g vegetable broth
  • 262 g white beans

For the tortilla chips

  • 57 g tortilla chips

For the garnish

  • 2 medium tomato (thinly sliced)

Directions

  1. Use a big pot and heat up the olive oil, fry onion and shallot for about 3-5 minutes until fragrant on medium heat.
  2. Add the broth and bring it to boil.
  3. Scoop out the avocado flesh and add it to the soup together with the cilantro and lime juice.
  4. Use an immersion blender and blend until you have a smooth mixture.
  5. Add the beans and the nutritional yeast, give it a good stir and make sure everything is heated up properly.
  6. Adjust the taste, add the garnish and serve the soup with some tortilla chips one the side, enjoy!
