Ingredients

For the salad

  • 1 cup fava beans immature
  • 5 sprigs fresh dill (thinly sliced)
  • 5 sprigs fresh parsley (finely chopped)
  • ½ cup green olives (cut in half)
  • 1 tsp lemon zest
  • ½ tablespoon olive oil
  • 1½ lbs potato (chopped into bite size pieces)
  • 2 tablespoons roasted pumpkin seeds
  • 2 medium shallot (thinly sliced)

For the seasoning

  • 1 dash black pepper (ground)
  • ½ tablespoon extra virgin olive oil
  • ¼ lemon (juiced)
  • ½ tsp sea salt

Directions

  1. Preheat a pot of water and boil the potato pieces until soft depending on how thick they are 5 - 10 min, check with a fork.
  2. Bring a small pot of water to boil and add the fava beans, blanch for 30 seconds.
  3. Prepare a bowl with cold water and add the beans.
  4. Heat up a skillet and sauté the shallot for about 5-10 minutes on low to medium heat.
  5. Mix the seasoning ingredients in a small bowl.
  6. Add everything to a big bowl and mix well, adjust taste before serving, enjoy!
