Energy balls with apricots, almonds, and rice cake – the perfect little pick me up to keep you going.

Let’s talk energy. We all need energy and we use a lot of it. Walking, talking, breathing, even sleeping – it all requires energy! So, it is extremely important to make sure we are fueling our bodies with enough healthy and nutritious food to use. In fact, the average male requires between 1800-2500 calories for their daily intake, while women require between 1600-2000 calories per day. This can and will vary greatly for each person depending upon your lifestyle and diet. 

But that is a lot of energy right? Well fear not, here at we are helping you to take one more step towards an easy and stress free recipe to meet your energy needs.

To make these wonderful little balls of pure delight, you will need 6 ingredients and 20 minutes. You will also need a bowl, a mixing spoon, and a plate. 

Besides tasting great, these energy balls are packed with essential vitamins and minerals for a stronger and healthier body. We first start off with almond milk, almonds, and dried apricots to provide us with a good source of protein, fibre, magnesium, vitamin E, and iron. Vegan protein powder is also added for protein. To top off our energy balls, we add in some rice cakes for those all-important carbohydrates which, when consumed, are turned into energy for our body to use.

Energy balls with apricots, almonds, and rice cake are the perfect any-time-of-the-day snacks because they are:

  • Super easy to make. 
  • A good source of protein – 10g per serve.
  • Travel friendly.
  • A great source of energy.
  • Family friendly.

One of my most favourite things about any of my energy ball recipes is how easily they store. You can make them on the spot, pop them into an air tight container and store them in the fridge for up to 48 hours. On the other hand, you could also set aside a bit of your day to mass produce a range of these wonderful energy balls (see below for more of my energy ball recipes) and then freeze them for 1-2 months. If you do choose to freeze them, I recommend separating the balls into serving sizes and storing them like this to make it easier for you to pull them out and go.

For the balls

  • ½ cup almond milk
  • ½ cup almonds (crushed and roasted)
  • ¼ cup dried apricots (finely chopped)
  • 10 rice cakes (crumble)
  • 1 oz unflavoured sunwarrior protein powder

For the coating

  • ½ cup coconut flakes (roasted)


  1. Mix all the ingredients together until smooth, except of the roasted coconut flakes which need to be used for coating.
  2. Make energy balls with your hands and coat them in the roasted coconut flakes.
  3. Energy balls taste best if you serve them chilled.
