Today is a good day! Would you like to know why? Because today I am bringing you this super simple recipe for my no bake almond energy balls.
Now I don't know about you, but I have taste for great food. You now, the kind that makes your taste buds want to dance and sing? But I also love it when that great tasting food is easy to make. Our lives are already busy, so by making recipes that are simple, we cut out the stress around cooking and truly get to enjoy our food.
That is why I strive to bring you easy recipes that taste amazing. And are, of course, vegan. My almond energy balls do all of this and more.
To make these no bake almond energy balls you will need 15 minutes and 10 ingredients. You will also need a bowl and a flat plate, making the clean up very quick. And who doesn't love that?
I have called these 'energy balls' because they are packed full of natural goodness, a good dose of protein, and you guessed it, energy! Which makes them great for snacking or even as a small meal substitute (for those days where you simply don't have time to fit in a full lunch).
The base of this recipe consists of almonds, coconut cream, goji berries, raisins, cocoa, sesame seeds, maple syrup, and tsampa. Pretty much everything but the coconut flakes. Each and every one of these natural ingredients brings multiple essential vitamins and minerals (too many to list), but let's take a look at the main ones.
The almonds, coconut cream, and sesame seeds are added for protein, healthy fats, magnesium, fiber, vitamin E, calcium, and iron. Which is great because we need each of these in our daily diet.
The remaining ingredients offer vitamin C, a good source of antioxidants, vitamin A, and potassium. Coconut flakes top off these balls for taste.
So many great nutritional benefits from natural products - why wouldn't you eat this stuff?
The no bake almond energy balls are perfect for snacking or for a small light meal because they are:
- Healthy and all natural.
- A high source of protein - 10g per serve!
- Easy to make.
- A great source of antioxidants.
- Small and travel-friendly.
- Able to help with sweet tooth cravings (in a healthy way!)
You can store these bites in the fridge for up to 48 hours in an airtight container. Or better yet, make a batch or two of these energy balls and pop them into the freezer. They will keep for 1-2 months in the freezer. All you need to do is separate your finished balls into your desired serving size and put them into an airtight container or bag.
