This week has been a big week for me, with lots of stuff going on. But in my rush to keep bringing you great vegan recipes, I discovered the importance of time. Time matters in our lives and we seem to constantly be struggling to get enough things done in the day. It was then that I decided to make this week about super simple foods that require little work or effort but still achieve amazing results. And as you might guess from the title of this recipe, these mini cupcakes are indeed, super simple.
I am very excited to bring you this wonderful recipe, so let's jump straight in and see what it takes to make these magic mini cupcakes.
To make this recipe, you are going to need 8 ingredients, 25 minutes, and the willpower to say no to 'test tasting' the entire batch (don't say I didn't warn you). You may want to have extra ingredients on standby, just in case.
The base of this recipe is made of almond butter, coconut flour, coconut oil, maple syrup, and vegan chocolate chips. These ingredients offer us a good source of 'healthy fats,' fibre, and protein. We then top off the cupcakes with mango, soy yogurt, and agar agar, adding vitamin C, vitamin A, folate, potassium, calcium, and antioxidants.
A healthy dessert or snack - now isn't that nice! You won't need to feel bad about this one.

You can easily store these cupcakes in the fridge for up to 48 hours in an airtight container. If you are after something a little different to take to work, pop one of these in your lunch box, but remember to keep them cool. I recommend popping them in a fridge at work as they are served best cold - this also give your colleagues a chance to admire your cooking skills and there is nothing wrong with that!
This recipe will make a batch of 12, perfect size for a family, party or event. However, if you wish to make a small batch, simply split the ingredients list into half to give you 6 serves.
