What's better than starting your day eating a delicious breakfast burrito?! We don't have to wait for the weekend or for taco night to get our dose of Mexican food. You'll be able to put these beauties together every single morning in the comfort of your home for the rest of your days. 

I might get carried away with my breakfast burrito-making. But in my defence, it is hard not to when you consider all the pros of having practical easy recipes like this one. And it is great that we only need a few ingredients, usual staples in every kitchen.

We need a healthy nourishing breakfast to start the day on the right track. The breakfast burrito recipe we put together will have you covered on every aspect. We have carbs, veggies loaded with vitamins, minerals, antioxidants, fiber. We also added different sources of protein and some delicious healthy fats. 

Breakfast Burrito with Tofu ingredients

As you can see, everything your body needs is well wrapped in a tortilla. This makes it a super kid-friendly recipe too. At home, my son loves the fact that he can eat with his hands. And I love the fact that food doesn't go absolutely everywhere. We might lose a cube or two of tofu, but nothing too crazy.

It's also great to get kids involved in the kitchen, they get so excited about helping! You can cook the filling, let it cool down and let the little ones help assemble the burritos. It's such a fun way to spend family time and if you have picky eaters, they will love being part of the cooking process so they will most likely eat what they've just created. 

I wasn't a fan of tofu burritos, they always seemed a bit flavourless. But that's the thing with tofu, it needs to be seasoned properly or complemented with other tasty ingredients. Otherwise, it can be too bland if it's just thrown inside a tortilla wrap. 

The tofu burrito we are making has sautéed onions, zucchini, and potatoes. We added black beans, salsa, and one of my favourite foods in the entire world, avocado. You won't be short on flavour with this recipe, that's for sure.

The breakfast burrito recipe is not just for breakfast. At home, I like to pack some burritos for lunch whenever we go out on an adventure. Or if I have friends over for dinner, this recipe is also a great lifesaver. You can feed a lot of people really easily without breaking the bank. 

The tortilla wraps I use are just the regular ones made with wheat flour. But if you are looking for a gluten-free meal the only thing you got to do is swap the wraps. A lot of supermarkets carry the gluten-free version or you can definitely find them at any health store. 

This is my favourite way to have Mexican food for breakfast lunch and dinner. It is such an easy, fun and super healthy recipe that you and your family will absolutely love!

Ingredients

For the filling

  • 1 avocado (mashed or cubed)
  • 1 cup cooked black beans (rinsed)
  • 12 oz extra firm tofu (crumbled)
  • 1 tsp olive oil
  • 1 medium onion (thinly sliced)
  • ½ lb potato (skin removed and cut into cubes)
  • 1 cup salsa
  • 1 medium zucchini (sliced)

For the burrito

  • 4 tortillas tortilla wrap

Directions

  1. Boil the chopped potato pieces until soften for about 5 minutes depending on size.
  2. Heat up the oil in a skillet and fry the potatoes slightly brown for about 5-10 minutes.
  3. Add zucchini and and onion and stir fry until fragrant for about 5-10 more minutes.
  4. In a pot heat up the salsa tofu and beans until hot.
  5. To assemble the burrito add some filling to one tortilla wrap. fold in the sides of the tortilla over the filling and roll while you tuck the edges.
  6. Heat up a pan and roast each burrito until golden brown from each side for about 2-5 minutes.
  7. Serve 1 burrito per serving, you can cut them in half if you like, enjoy!
