Bean and Zucchini Cutlets

For the cutlets

  • 312 oz brown lentils
  • 1 tbsp nutritional yeast
  • 14 cup porridge oats
  • 2 medium potato (chopped)
  • 1 medium scallion (finely chopped)
  • 712 oz white beans
  • 4 large whole grain pita bread
  • 3 medium zucchini (chopped)

For the side vegetables

  • 712 oz butternut squash (chopped)
  • 1 medium zucchini (sliced)


  1. Boil the potatoes until soft.
  2. Mash the lentils, beans, onion, zucchini pieces, and cooked potato into a cutlet mix.
  3. Shape the mix into cutlets and cover with oats.
  4. Grill the sliced zucchini and squash.
  5. Serve the cutlets and vegetables inside of warm pitas.
