Baked Beans with Spinach and Mushroom

Baked Beans with Spinach and Mushroom

For the baked beans

  • 2 cups butter beans (rinsed)
  • 1 tbsp maple syrup
  • 1 tsp mustard
  • 1 tsp olive oil
  • 1 medium onion (diced)
  • ½ tsp sea salt
  • 1 tsp soy sauce
  • 4 medium tomato (chopped)
  • ½ cup vegetable broth

For the vegetables

  • 2 dashes black pepper (ground)
  • 1 lb button mushroom (sliced)
  • 4 cups frozen spinach
  • 4 cloves garlic (minced)
  • 1 tsp olive oil
  • ½ tsp sea salt

For the bread

  • 4 slices whole grain bread (optional: toasted) (optional)


  1. For the baked beans use a pot and heat up the oil, saute the onion for 3-5 minutes until translucent.
  2. Add the rest of the baked bean ingredients and let it simmer for about 15 minutes, stir occasionally.
  3. To prepare the vegetables heat up the oil in a skillet, add the garlic for about 30 seconds until fragrant.
  4. Add the mushrooms and stir fry until slightly brown on high heat for about 5-10 minutes.
  5. Add the spinach and stir it a little bit until heated up properly.
  6. Adjust taste and serve the baked beans with vegetables and a slice of bread, enjoy!
