I really think breakfast bowls are the ultimate upgrade from your usual bowl of cereal. Don't get me wrong, I love a good and simple bowl of cereal. But to be honest, it is not the best thing to have for breakfast, especially if you are buying it from the supermarket.
A lot of these cereals contain tons of sugar and so many preservatives. Also, they don't have much nutritional value. Some are fortified which helps but if you are looking for an easy healthy breakfast, you are better off chopping up some fruit and mixing them up with a few other yummy things in the blender.
This breakfast bowl is seriously something else. At home, everyone loves how creamy and fluffy it turns out. My son calls it ice cream breakfast, you will be amazed by how much it resembles all things good in ice cream.
This breakfast recipe is super simple and quick to make because who has time to get fancy in the mornings? So, all you'll have to do is throw a few ingredients in the blender, give it a good whirl and that is it.
If you want to have that peach ice cream consistency I have two tricks for you. The first one is to use a "full cream" soy milk. And the second one, and probably the most important one is to avoid thawing out the peach slices all the way.
When you add the frozen peach your mixture becomes a bit frothy, otherwise, it will be too much water in the mix. And even though the banana helps with that consistency, it won't be enough to keep it all together.
For the flavour, I just added a dash of turmeric powder. A little goes a long way so make sure you don't go too crazy on the turmeric. It might be too overpowering and it can be too much for some people.
I like to start the day with a good dose of protein. So, we added a scoop of unflavoured Sunwarrior protein powder. I use the unflavoured kind because the banana and the peach are already sweet enough for me.
The last thing we need and probably my favourite, the toppings! Here you can go as crazy as you want but I've found that this combo goes perfect with the overall taste of this yummy recipe.
I use things I already have at home to make my life a lot easier, slivered almonds, coconut flakes, blueberries, and a few fresh leaves of mint. I use frozen blueberries since I always have a bag stashed in the fridge. It is super handy, much cheaper than using fresh blueberries and you get the same nutrients.
