Are you a snacker? I certainly am! Well, if you've ever struggled to find the perfect crunchy, salty, guilt-free snack, this recipe is for you. We are making Pan Roasted Tex Mex Chickpeas! With the perfect crisp and the perfect flavour, you will become addicted after the first handful!
As a chronic snacker, I know the struggles of finding snacks that are healthy and flavourful. We have things figured out on the sweet side, protein balls and smoothies do the trick just fine. But when it comes to crispy and slaty snacks, that's where the real struggle is.
This plant-based snack is one of my favourites for a bunch of reasons. First of all, you will be amazed by how quick and easy it is to make this recipe. You can make it in about ten minutes and you only need a pan and a handful of ingredients, chickpeas and some spices.
Also, this snack is not only guilt-free but a super delicious high protein snack. Chickpeas are a great source of plant-based protein. In 100grs of chickpeas, you get about 19gr of protein! How good is that?
Aside from the high protein content, these tasty legumes are also rich in vitamins, minerals, and fiber. By adding them to your diet you boost your heart health, improve digestion and skin, strengthen your bones, and they are great for maintaining blood pressure and weight management.
So, if you are planning to have a lazy evening in front of the TV, treat yourself to a batch of roasted chickpeas. And leave the potato chips alone! This plant-based snack is much better for you.
I can say it will be tastier as well! We just need to mix a few spices to get an intense Tex Mex taste on these chickpeas. I mixed smoked paprika, garlic powder, ground cumin, and a bit of salt. You can make a batch of this mix and use it on a variety of dishes for a punch of flavour.
As I said, it is super easy to make these roasted chickpeas. You just have to throw them in a pan with a little bit of olive oil. While on the stove, I move them constantly so they roast evenly. We want them all to be golden brown and crispy.
In another bowl, mix all the spices really well. Add the chickpeas to the mix and toss them for a little while. We want each one of those chickpeas well covered with the Tex Mex spice mix.
Either let them cool down a bit or eat them straight away. But make sure you make a big batch because you will not want to stop eating this delicious snack!
